Eat your greens! How many times have you heard this or exclaimed this exact same phrase to your children? We all know there are big benefits to eating fresh vegetables, especially green ones, but sometimes fitting them into our daily routine can be a struggle. Green smoothies are not a new concept, but they may be new to your diet, and they are certainly worth incorporating. They not only offer a multitude of benefits, but they tend to be a more palatable option for finicky eaters – whether child or adult!
The base of your green smoothie is a green leafy vegetable (or combination) and is oftentimes blended with vitamin rich fruits as well as a liquid of your choice and usually some ice (unless you use frozen fruit; see below).
Greens such as kale and spinach are immune-boosting foods that contain high levels of vitamin C and folate and often the base of a green drink. They are powerful antioxidants and they help the body to fight off infection. They also happen to make perfect smoothie ingredients and a solid base for your smoothie. In addition to the kale and spinach, we incorporate bananas for sweetness and a boost of potassium and fiber (try freezing your banana slices so they replace the ice in your drink!) as well as fresh celery and lemon juice.
Round out your smoothie with either water, unfiltered apple juice or a milk (dairy, nut or coconut – whatever works for your diet). You really need the liquid to get the smoothie moving in your blender.

Perfect Green Smoothie for Beginners
Yields 1 serving
1 cup of packed, chopped kale or spinach
½ banana, sliced (frozen works best but not necessary)
1 stalk of fresh celery, chopped
½ cup of apple juice (or water)
½ cup of ice
1 tablespoon of lemon juice (but we would omit if you decide to use milk as your liquid)
- Add the greens, banana, celery, apple juice, ice and lemon (optional) to the base of our blender.
- Blend until smooth.
